In my (non professional) opinion, the main difference in taste comes from the crema in the long black – it’s my favorite part of espresso.
Depends on where you are. It’s regionally specific to AUS/NZ. I would not expect a barista in the US to know how to prepare a long black in the same way I wouldn’t expect a kiwi to know how to prepare an au lait or Gibraltar.
